Saying it’s hot would surely be an understatement, it’s humid, sticky, and just plain gross. Now I know most people are quite partial to the summer time compared to the other seasons, But I am not one of those people.

Lamb in a Savory Red Wine Sauce Over Creamy Polenta

25 Jun

GEDSC DIGITAL CAMERASo maybe it’s because I just turned 21, and I am now a real adult or maybe it’s the realization that this fall I will be completing my final year as an undergrad in college, but lately I have been thinking an awful lot about my future. Mostly I have been thinking what the heck am I going to do when I get out of here, and more importantly what do I wanna do once I get out.  It’s a scary thought not knowing what you wanna do, maybe it’s ok for a sophomore, even a junior, but as a soon to be college grad I am not sure not knowing what I wanna do is really an acceptable excuse, is it?

So this is a post that is very long overdue, what can I say, I’ve been busy. In addition to being a student and talking classes (yes even in the summer) I am also a now full time working girl, meaning I essentially have no free time what so ever! On my days off I can usually be found doing several loads of laundry, grocery shopping, studying for my managerial accounting class, a subject which I have deemed impossible to learn, and just generally running around like a chicken with my head cut off.

So here I am sitting in a nearly empty classroom as I await for the first final of my spring semester to begin! It seems,  like just yesterday I was just getting back from Italy and buying books in anticipation for my spring semester to begin, now it’s ending, am I a bit nostalgic, not at all I couldn’t be happier now that the semester has nearly come to an to end.

Yesterday began as a beautiful, bright, sunny day but that quickly changed as news of two explosions at the Boston Marathon erupted, and quickly the day turned dark and depressing as the overall mood turned sad.

The day after marathon Monday is usually a proud day for runners, they walk around the city proudly sporting their medals and showing off their florescent marathon jackets, however today was a bit different in the city of Boston. The usually overcrowded and chaotic T was nearly empty this morning. Instead of a crowd awaiting the t platform, four armed police men stood there as they checked each individuals bag. Classes today were nearly deserted and those that did attend looked unfocused and disinterested. The usual face-paced, energetic Bostonians that walk the city streets were today replaced with somber faced people, confused, and quiet.

So it’s finally that time in the semester, the time I have come to both love and hate. With only 22 days of school left I am overjoyed to be nearly done and I am eagerly looking forward to a three month reprieve from school,  but at the same time I am dreading the next 22 days. Within that time I still have to complete 4 projects, write one paper, study for three tests, and of course prepare myself to take five finals……obviously you can see my conflict as to weather I should be jumping for joy or pulling out my hair.

Recreating My Favorite Italian Pizza, Tomato Sauce and Spinach a top a Thin Crust Topped with an Egg

????????????????????

This past weekend I had a serious case of the Sundays…some people enjoy Sundays, they find it to be a leisurely, relaxing day, I however, am not one of those people. I find the entire day long and boring. Before you go on thinking I am a pessimist let me explain myself. For starters Sundays are typically my homework day, and this weekend I happened to be quite busy which meant before Sunday I hadn’t even had an opportunity to start any work, meaning that this particular Sunday I had five subjects worth of homework, a paper to write, and two tests to study for (can you really blame me for being so indifferent to Sundays now?) My second reasons for not being a huge Sunday fan of course is knowing that tomorrow is Monday…and you really can’t argue that anyone actually looks forward to a Monday. I know I certainty  don’t especially this week as I have a huge midterm and accounting test…..not fun!
