About

Benvenuti al mio sito ! My name is Kait! If you’ve taken a look around you may have noticed I have a bit of an Italian theme going on, that’s because I  am of Italian decent, and quite proud of my roots! I recently spent four months abroad, living in Florence, Italy. There I had the opportunity to take several culinary classes at the Apicius
International School of Hospitality where I learned how to prepare some quite delicious italian cuisine.  I also was fortunate enough
to spend a significant amount of time with several local Florentine families
where I learned to prepare and appreciate the local Tuscan cuisine.
My time in Italy was the best time of my life and I am eager to return, my hope is to one day move to Italy and start my life over there. However, until that day comes I guess I’ll have to settle for fantasizing about it, while I finish up my last two years of college in Boston, MA.
One of the things I quickly noticed upon my arrival to American was the very skewed view that many Americans have about the Italian culture, specifically authentic Italian cuisine.
I am sorry to disappoint you, but Chicken Parmesan, Spaghetti and Meatballs, the popular christmas celebration of the seven fishes, and Sunday pasta dinners don’t actually exist in Italy. Those are all americanized Italian dishes and celebrations, that somehow became popularly known as traditional italian food and celebrations here in America. My guess is that these dishes and celebrations probably originated hundreds of years ago when Italian immigrants came to American and decided to  celebrate their own personal family traditions here. These things soon were seen as the “italian way” and unknowing people assumed this is the way everyone in Italy ate and celebrated, when in reality it was just the way that a select few celebrated. Todays it’s rare to go to any Italian restaurant and not see baked ziti and pasta with alfredo sauce on the menu!
My goal with this blog is to try to inform fellow readers about the authentic Italian traditions by posting authentic italian recipes and information about food focused celebrations, while also sharing my experiences about my time abroad!
Now although I am quite bias about Italian food I am also very fond of other ethnic cuisines, some of my favorite include middle eastern, asian, and indian. So I will also be publishing my ethnic inspired recipes too!
In addition  to publishing recipes I will also be writing about the local cuisine here in Boston, I will be posting restaurant reviews and product information!
I am also an avid traveler and always on the move whenever I have the opportunity to do so!
So follow me and stay up to date with my culinary adventures as I travel and blog about my experiences!

    Came across your blog by way of clicking through past Foodie Penpals (love how this program seems to do that!) and just had to comment; we are so freaking similar!
    I had the same stomach issues and thought I had fixed them my two years being vegan… until my stomach started acting up again and I put on 40lbs.
    I recently was introduced to the paleo diet and am starting to make the transition, and it’s finding blogs like yours that really gives me that extra kick to commit to the change.
    I’ll definitely be following your posts 🙂

        I definitely feel better when I make myself stick with it. I’m also still kind of struggling with an ED so I still don’t “learn” when I feel terrible after inhaling doughy cinnamon rolls and overly sugary cakes… but I’ll get there! My clean-eating days I feel awesome and I (usually) am liking the challenge of paleo baking as well. In my vegan days I did dessert catering, so it’s weird to be thrust into a world of almond meal, coconut flour and raw honey baking! I’m having moderate success thus far…

        I know how you feel, although I am following a strictly paleo diet sometimes I struggle to have the temptation to resist all the Paleo treats, sometimes I let myself over indulge in a bit too much inevitably getting a stomachache, but as you said on the day I practice self control and clean eating I feel great! How have you found paleo baking, quite different from Vegan baking, I used dates now instead of honey to sweeten up dessert (I usually puree dates, coconut milk, a tbsp of water and a bit of vanilla) the taste and consistency is just like caramel and it add immense flavor to everything! Was it recent that you gave up being a vegan?

        Yeah, the baking is definitely weird; I find myself not loving the consistency of everything, but I’m sure that will take getting used to. Gonna have to try the dates; i’ve used them in ice cream but not in baked goods yet.
        I gave up being totally vegan back around December, but was still eating a lot of tofu, soy and veggie burgers on alternating meat days. I only started cutting out that kind of stuff about a month ago.

        yeah it’s obviously a completley different change, I still mind myself graviatating toward the meat free alernatives when grocery shopping then I have to remidn myself that I actually eat meat now!

        …the paleo baking battle, i have a love hate relationship with paleo baking, sometimes I love it because unlike normal flour I find that the almond and coconut flour adds a great flavor which enhances the overall product, but the measurements really throw me off…i do a lot of experimenting and taste testing!

        I remember the first time I tried to use just coconut flour in a recipe… holy wow! It was like a science experiment in my bowl haha

    Hi Kait, I was back searching some of the terms people use to find my blog [blog.kait.us] when I found yours. Imagine, another Kait, from the northeast, vegetarian (formerly), and now living in Italy. I felt like I was reading a blog I created a long time ago and forgot about, haha.
