Saying it’s hot would surely be an understatement, it’s humid, sticky, and just plain gross. Now I know most people are quite partial to the summer time compared to the other seasons, But I am not one of those people.
Of course there are some great perks that summer time does have to offer that even I can’t argue with such as the fact that school comes to a halt, we have an excuse to eat ice cream daily, and outdoor barbeques usually mean really delicious food. But in my opinion these advantages in no way outweigh the disadvantages of summer time such as the fact that sitting out in the sun for an hour can result in a very red and painful burn, mosquitos seems to lurk everywhere, and then there is the humidity which just makes everything way way worse.
Today has got to be the hottest day of the summer so far, with the humidity it’s nearly 105 degrees, plus the crowded city streets only seem to increase the heat!! Although most people agree that humid days like today are simply brutal there are a handful of people who claim they love the humid weather which makes me quite skeptical. Who could actually like the feeling of sweat trickling down their neck or the feeling of ones clothing sticking to their back…
Honestly I would prefer winter any day compared to summer, at least when it’s cold you can do things to make yourself warm, put on an extra sweater, bundle up a bit more, but in the summer it’s a bit more of a struggle to cool yourself down. There’s only so many things you can take off while still being appropriately dressed to be seen in public…although some people sometimes like to push those boundaries!
On days like these having to cook can seem like a fate worse than death and turning on the oven can seem like self-punishment But if you are daring enough than I highly suggest this light and delicious summer time side dish, plus it’s quick and easy to make! I recommed you crank the ac, work quickly, and then enjoy!
Ingredients
2 lbs of whole green beans
3 cloves of garlic minced
1/2 cup of olive oil
salt and pepper
5 strips of bacon, crumbled
1/4 cup of almonds chopped
Method
1) Begin by preheating oven to 350, toss green beans with garlic and olive oil, salt and pepper and place on a large baking sheet, make sure to even spread out green beans, place in oven and roast for 15- 20 minutes or until green beans are slightly crisped and browned, remove from oven and let cool
2) In a saute pan dry roast almonds over medium heat, remove from heat after almonds become potent
3) In a large bowl add green beans, add in crumbled bacon and crushed almonds, use a pair of tongs to mix all ingredients together, serve warm!
