Rosemary Roasted Carrots

I did promise you all that rosemary would be playing a quite intricate role in my upcoming recipes right? Well then you shouldn’t be so shocked that I have added yet another recipe featuring the potent herb, are you sick of rosemary yet……I am not which is a good thing because I am proud to inform you all that my rosemary plant is still prosperous and I have not yet managed to kill it……success!

So without further ado here is the recipe for this simple and delicious side dish!


1 15 oz bag of carrots

1 1/2 tbsp of olive oil

1/2 tsp of lemon juice

1/2 tbsp of chopped rosemary (or another potent herb such a thyme)

a pinch of fresh black pepper and sea salt


1) Prheat oven to  350, in a bowl combine carrots with olive oil, honey, rosemary, salt and pepper

2) Place carrot mixture on a parchment lined baking sheet and let roast in the oven for 30 minutes or until carrots are soft and tender and can easily be pierced with a fork
