Banana Blueberry Coconut Flour Muffins

So for those of you that read my rant last week about not being able to bake, well disregard it because guess who made a batch of delicious muffins (this girl right here)! There was simply no way I was going to leave the baking battle defeated, so I went to my kitchen pulled out all my baking supplies and started concocting (there in fact quite a few baking creations that were the result of this endeavor so say tuned for more muffin recipes to follow)

12 medium sized muffins


1 1/2 cup of coconut flour

1 tbsp of baking powder

1 tbsp of cinnamon

1 tsp of vanilla

2 tbsp of honey

1/2 cup of all natural applesauce

1/2 cup of coconut milk or water

4 eggs

3 overly ripe bananas mashed

1/2 cup of fresh blueberries


1) Begin by preheating the oven to 350, in a mixing bowl combine the dry ingredients

2) In a separate bowl combine all of the wet ingredients (everything except for the bananas and blueberries)

3) Add the wet ingredients to the dry ingredients and combine, next mix in the mashed bananas and blueberries

4) Spoon batter into muffin liners or into greased muffin tins and bake for 25- 30 minutes or until the muffins are golden brown

    Coconut flour sounds much healthier than regular flour and i bet it tastes better too. No wonder these muffins taste great… Just look at all the yummy ingredients you used šŸ™‚

      coconut flour is amazing I highly suggest you try it, it has a subtle coconut flavor which really adds a nice taste to any baked good plus you use far less coconut flour than you would regular flour in a recipe!
