Winter Inspired Fresh Salad

A Simple garden fresh Salad made with arugula, mixed greens, and spinach, fennel, garnished with pomegranate seeds, pecan halves, and sliced pears tossed with a tangy pomegranate vinaigrette
Ingredients
1 cup of fresh baby spinach
3 cups of freshly chopped arugula
2 cups of mixed greens
Pomegranate seeds from one medium sized pomegranate
½ cup of halved pecans
1 pair thinly sliced
1 tbsp of chopped basil
½ cup of chopped fennel
Pomegranate Vinaigrette
Ingredients
1 tsp of chopped shallots
½ cup of pomegranate vinegar
¼ cup of olive oil
1 tbsp of fresh lemon juice
Assorted herbs
 Method
1)      In a large salad bowl mix together greens, pecans, pomegranate seeds, fennel, and basil
2)      In a small bowl whisk together all ingredients needed to make vinaigrette, let sit for a few minutes before pouring over salad, using your hand mix together the salad and dressing, being sure that all ingredients are well coated
3)      Garnish the salad with additional pomegranate seeds, pecans, and thinly sliced pairs
