Spicy Crock Pot Vegetable Soup

The perfect remedy for a cold winters night = soup, and though it’s not exactly freezing here, the nights in Florida do tend to get quite chilly. However, I think you’ll find this easy spicy vegetable soup an instant favorite regardless of the temperature outside

Now attention all busybodies, workaholics, and  all you non cooks that claim you can’t boil water, THIS IS THE RECIPE FOR YOU! It’s quick, simple, and delicious. I started my prep work for this soup at 8:50 and by 9:00 I was completely done! Simply place all ingredients in a crock pot, set it for 2 hours, and return to a deliciously fragrant soup ready to be slurped down. To make this recipe even easier use frozen vegetables ( now you don’t even have to worry about the prep work involved in preparing vegetables)

I use to be a bit skeptical about using frozen vegetables, thinking they were beneath using the whole produce in the grocery store, but  once I started living on my own I found myself always rushing to eat all my produce within a few days of buying it so it wouldn’t go bad, plus it was my first time ever living with a budget ( a very tight budget), therefore frozen vegetables became my new favorite thing. They are all ready chopped and prepared for you, they’re cheap, and they don’t go bad, whats not to like about all of that!

Then a few weeks ago I was at a culinary demonstration, the Executive Chef, Michael Galata of the famous restaurant, Le Cirque, told the audience that he personally uses frozen vegetables in a lot of his cooking. The vegetable are picked in their prime and then frozen to preserve their fresh quality, he said he prefers the frozen vegetables to some of the produce in the grocery stores which isn’t always in season. Frozen vegetables are a great alternative if you can’t find in season produce. quickly blanch or steam vegetables in hot water to preserve the nutritional benefits.

Give this simple and healthy recipe a try, the fresh vegetables in combination with the slightly spicy broth make this the ideal dinner for a cold winters night, sure to satisfy your appetite!

Ingredients

1/2 cup of chopped sweet onion

2 cloves of garlic minced

3 cups of mixed vegetables chopped into bite size pieces ( I used asparagus, yellow squash, rep pepper, broccoli, cauliflowers, carrots, and green beans, but any variety will do)

1 cup of medium spicy salsa

1 tsp of tomato paste

1/2 tsp of hot sauce

1 tsp of cumin

1/2 tsp of paprika

1/8 tsp of cayenne pepper

4 cups of vegetable stock ( use more if necessary)

1 tsp of cilantro ( used to garnish)

Method

1) Place all ingredients in crock pot

2) Pour in vegetable stock, make sure stock completely covers all other ingredients, add more if necessary

3) Set crock pot on high and let simmer for 2 hours


4) Once done, ladle your self a heaping bowlful of this hearty vegetable soup

5) Garnish with fresh cilantro and serve warm!
