Decadent Dark Chocolate Avocado Mousse

I consider myself a pretty adventurous eater but, I even admit I had my doubts the first time my cousin suggest we serve this dessert at a family gathering. Now don’t get me wrong I love avocados and I love chocolate, but the combination of the two just seemed a bit odd to me! Apparently I wasn’t the only one who thought so because upon announcing our dessert, a Dark Chocolate Avocado Mousse to our family, we were met with quite a few apprehensive looks. However, one spoonful of this light but decadent dark chocolate mousse and it instantly became a favorite amongst the table. The mild avocado provided a perfect buttery and creamy texture which was then flavored up with vanilla extract and coco powder, and sea salt and naturally sweetened with coconut oil and honey. It by far was a perfect ending to a perfect and much enjoyed meal.
The flesh from 4 ripe Hass Avocados
½ cup of special dark coco powder (use less if you desire a less rich mousse)
½ cup of softened coconut oil
½ cup of honey
2 tsp of pure vanilla extract
A dash of Sea Salt
1) Simply puree all ingredients together in a food processor until velvety smooth, sample mixture and add extra ingredients as needed according to preference
2) Refrigerate Mousse for 30 60 minutes ( if you refrigerate for any longer I suggest Re whipping mousse as the coconut oil may harden the mixture)
3) Pipe Mousse into long stemmed cordial glasses  and garnish with a raspberry for a truly elegant dessert
